Zucchini Bread

Winter storm hits the south and our little part of South Carolina is covered with snow and ice.  It's beautiful outside, but not posting any photos of that right now.  Being 35 weeks pregnant, I didn't venture out in the cold and slippery weather to take photos while Russ and the kids played outside.  Perhaps tomorrow.  Despite the below freezing temperatures all day, we are quite cozy inside, toasting ourselves around a fire.  I love sitting around a fire!  It's incredibly beautiful, warm, and brings a feeling of peace and contentment with it's smell and sounds of crackling wood.  So soothing, as it warms the heart as much as the body.

Now, what else could make a winter evening wonderful but zucchini bread.  Mmmm....good!  I thought I'd share the recipe because it is a favorite fall and winter treat around my house.  It also makes good gifts for friends and family.  Sometimes I use this to make muffins instead.  Very easy and I hope you enjoy!

Zucchini Bread

2 cups sugar
3 cups flour
3 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
1 tsp salt
Nuts (optional)

Sift all in large bowl

3 eggs, beaten
1 cup cooking oil
1 tsp vanilla
2 heaping cups grated zucchini (2-3 zucchini)

Mix in a smaller bowl.  I finely grate my zucchini, but you can do a regular grater as well.  Pour liquid mixture into dry mixture and stir until just mixed.  Pour into 2 greased loaf pans. Bake @ 325 for 1 hour.

  1. Mmmmm! I love zucchini bread! I have an old recipe from a friend of my mothers but yours looks like it would be yummy too, might have to give it a try next week. I do fine grate as well...the kids will eat it easier!
